in the rich, alluvial soil of Lambrusco di Sorbara in Soliera Italy, just outside of Modena in the Emilia Romagna region, the Maletti family has been producing quality traditional balsamic v inegar (aceto balsamico tradizionale) for generations. The Maletti’s produce their balsamic v inegar from the wine and grape must (unfermented, pressed grape juice and pulp before it’s turned into wine) of selected Lambrusco (red) and Trebbiano (white) grape varietals. Their v inegar is aged in an accelerated yet regulated evaporation process in former wine barrels of French Allier oak. The six year v inegar has an extraord inary density, aroma and depth of flavor with a clean delicate finish . Maletti balsamic v inegar is superb on a wide range of dishes, from fresh strawberries to salad greens topped with Parmigiano Reggiano shav ings to most any meat dish.< p>

Top quality Balsamic vinegar
I bought this by chance in a store, can't remember where. It lasted about one year. I am a passionate cook so I tried many types of balsamic vinegar so I can say with confidence that this is one of the best I came upon. The price is also o.k. for the quality -- it really compares well with some of the top ones ($100 for a smaller bottle). A few drops of it go a long way, the way it should be. It has a balanced taste, fruity, velvety, not too acidic and not too sweet, just right. The consistency is also right, it is a bit thick (syrupy) the way a good balsamic vinegar should be. I am glad I was able to find it again online although I am paying a a steep price for shipping ($11.78) -- I will have to look through the stores here and see if I can find it once again.
