Lemon Bird jumped on the chance at Garlic Scapes from a local farmer: usually grown more on the East coast than West coast.
Garlic scapes are the flower stems produced from the garlic bulbs. They come up in the spring before the bulbs are ready.
The scapes have the taste and texture of a garlicky green bean pickle. They are incredibly fragrant with an incredibly light but amazing garlic flavor. Lemon Bird added a few coriander seeds, some lemon basil and a few onion blossoms. The pickles have a hint of a lemon. They are perfect right out of the jar. Or put them with your favorite treats - burgers, potato salad or cocktails.
