    Island Pork Kabobs

    INGREDIENTS:
    Glaze: 
    9 oz Earth & Vine Provisions Peach Chipotle Jam 
    1 Lime 
    3 Garlic cloves, crushed 
    Pork Kabobs: 
    2 lb Pork loin or thick-cut pork chops, cut into 1 inch cubes 
    12 Large mushrooms 
    2 Large yellow onions, quartered 
    3 Zucchini, cut into 1 inch pieces 
    3 Cups precooked white rice 
    Olive oil 
    4 Skewers 

    PREPARATION:
    Stir together Peach Chipotle Jam , lime juice and crushed garlic in a small bowl and set aside. Thread pork and vegetables onto 4 to 6 skewers, rub with olive oil. 
    Over medium hot fire, grill skewers. Five minutes before they are done, brush on 1/2 of the Peach Chipotle Jam glaze. 
    Combine precooked rice and the remainder of the glaze in a skillet and cook just until hot. 
    Spoon rice onto 4 plates. Lay skewers on bed of rice and garnish with honeydew melon and fresh mint. Serve hot.
